Another spur-of-the-moment idea turns into travel to another country we've never visited -- Mexico -- specifically the states of Oaxaca and Chiapas in the far south. Research indicated these area to be among the least-traveled and most-interesting. Food, culture, art, crafts, people...it's all there, waiting for us.
