Sorry this is really notesy - enjoy the pictures, I spent all day cooking and am trying to catch up with all my blogs!

08:40 Cooking today. Feeling pretty tired, I might not do anything this afternoon but rest as my eyes look a bit bloodshot!
09:17 Koto chef founder - australian lady Tracey teaching us

Hanoi tattoo is an exhaust burn on the leg, I got one of these when I was 14 mind!

09:27 Fish sauce, first extraction mam nhi and phu quoc. Clear without sediment.
09:35 Beetlenut, relaxant
Beetleleaf, limestone and camquat, chew, spit chew for 20 min.
09:46 Silkworms
09:47 Garlic should be purple! Not White apparently
09:48 Motorbikes in market
09:50 Smashing frogs on tiles, skinning, whilst still alive! Then gutting. Felt a bit light headed as it was so violent.
14:51 Army museum. Interestingly they call the Vietnam war the Anti-American imperialism war! Hmm says a lot!
15:34 Army museum is full of trinkets and tanks an planes, but still propaganda against America
20:03 Nice chat with family, apparently Florence Welch has bought several pieces of my sisters jewellery from a shop in London which is rather exciting! (no, I didn't remember who she was either until she said Florence and the Machine who I really like! I just didn't know that was her last name!)

It's pouring with rain outside.
20:24 Best: cooking

Worst: being so damn hot and sweaty

Beautiful: some of the parks around Hanoi

Biggest thing on a bike: 2 single bed mattresses

"and just feeling a massive sense of achievement"

75 or 100 points? :P

I'm constantly amazed at how you can go into these cooking classes etc after witnessing the wholesale slaughter of what we westerners would probably call pets, and then knock up somekind of extravagant foreign stomach would be churning all day!
