It's getting closer now. House is sold. Furniture and a lifetime of collecting crap is being sold and it's time to make plans. What I can't carry I don't want anymore

in 2007 I was diagnosed with cancer and after a serious operation and some hectic medication I am enjoying life again. I still have 3 small tumors but they seem to be behaving themselves. Now is the time for me to go on an adventure. "Remember what Bilbo used to say: It's a dangerous business, Frodo, going out your door. You step onto the road, and if you don’t keep your feet, there’s no knowing where you might be swept off to." – JRR TolkienMy rough plan is to head of to Mumbai and then see where the wind takes me. i would like to go to Thailand, Cambodia, Vietnam, Laos and China.I am planning to take a year and have no real itinerary and if I like somewhere I will stay and if not will move on. If I hear of somewhere interesting I will detour of my planned route.  I have worked as a chef and had my own pubs and restaurants and I would like to learn traditional ways of cooking. Not fancy restaurant food, but the food that is prepared and cooked in homes.

I would really like to hear from any travelers on advice, hints, tips etc.
