We only spent one night in Livingston, but what a night it was! We decided instead of a normal dinner in a restaurant we would go spend the evening with a Garifuna family at the Rasta Mesa and learn to cook one of their traditional dishes, Hudut. (A coconut broth with fish and green banana dumplings)

Grinding coconuts to make the coconut milk and filleting the fresh catch of the day before smelling the onions and garlic fry made our taste buds water!

After a delicious dinner, we were treated with a special treat! Some of the locals gathered to play some typical Garifuna music, Punta. Banging on the drums, turtle shells and singing in true Garifuna style it was not hard to get up and join the families kids in a dance!

In the morning we joined a New Yorker called Meg on a boat headed for Utila

Note: Have you ever woken up to the sound of water splashing on the bedroom floor? That night it rained heavily outside but I didn't hear the forecast for rain INSIDE. I sat up to see Simon peeing tequila at the end of the bed. LUCKY the bedroom floor was just concrete and thank god he didn't do it next to me on the mattress!
