Once settle into our room at the hostel we decided we would go spend our one evening in Livingston with a Garifuna family at the Rasta Mesa. Here we learnt to cook one of their traditional dishes, Hudut, a coconut broth with fish and green banana dumplings. Grinding coconuts to make fresh coconut milk and filleting the catch of the day before smelling the onions and garlic fry made our mouths water!
After sharing the delicious self-made dinner, and a couple of cold beers with our generous local hosts, we were treated to a private concert
In the morning we joined our new friend from New York, Meg on a boat headed for Utila
Note: Have you ever woken up to the sound of water splashing on the bedroom floor? That night it rained heavily outside but I didn't hear the forecast for rain INSIDE. I sat up to see Simon peeing tequila at the end of the bed. LUCKY the bedroom floor was just concrete and thank god he didn't do it next to me on the mattress!
