I've booked and paid for my airfare to Central America and pretty happy with the deal I got.  In the end, I found that it will be cheaper to travel to Los Angeles from Perth via Singapore (instead of Sydney/Melbourne).  To get from Perth to Central America, this is what I'm doing (all figures include taxes):

Perth to Singapore with Tiger Airways, 17 December $486 (one way)
Singapore to Los Angeles with Cathay Pacific (via Hong Kong), 19 December $1512 (rtn)
Los Angeles to Cancun, Mexico with Mexicana De Aviacion, 21 December $317 (rtn)
San Jose, Costa Rica to Los Angeles with American Airlines, 22 January (QFF 27500 points)
Los Angeles to Singapore with Cathay Pacific (via Hong Kong), 23/24 January
Singapore to Perth with Qantas, 26 January (QFF 25000 points)

Total Cost Perth to Mexico/Central America:  $AUD2321 or $US1925 plus 52500 points.

I'm really happy with this deal.  I'm able to cancel with minimal charges except Mexicana De Aviacion which is non-refundable but changeable.

After an extensive search on the internet and calls to Qantas, this is the cheapest possible way I found to do this.  Zuji.com.au is great for people who are willing to forward plan, but terrible for those who want to travel on a whim because all the best deals get snapped up months in advance.  For this reason, I still support the use of Qantas' OneWorld ticket for those travelling round the world for up to a year.  You can change the dates of your destinations within days... it's just a shame that you have to lock in your route unless you want to pay the fees to change this.

If I change my mind, at least I have the flexibility to spend the month in South East Asia, my second option at this stage.
