The 12 hour bus ride from Bangkok to Chiang Mai was definitely not fun. The old hippie man in front of me was not wearing deodorant and probably hadn't showered in a few days. My personal air conditioner was not working and there were two drunk Irish guys in the row next to me. I also had a bad cough. All of these things did not make it easy for me to sleep on this overnight journey.

I finally made it to Chiang Mai. I was exhausted and I didn't feel well. So I didn't get to do some of the physical things that I wanted to do such as jungle trekking or white water rafting. I did make it to the Sunday market which was really neat. I bought some jewelry from this girl that was about my age. She made very good looking pieces. I also ate a lot while I was there. I tried the spring rolls, waffle fish, fresh orange juice and some sushi. Everything is dirt cheap. For example, for a 20 oz glass of fresh orange juice it is 40 cents. For a large spring roll, it cost 15 cents. I would have stayed much longer but it started pouring down rain.

The next night, I went to the regular night market. I didn't like it nearly as much as the Sunday market because it was all a bunch of junky commercialized stuff. Everything looked the same from one booth to the other. Plus, they didn't have any of the food vendors which took away half of the fun.

I decided to take a cooking class at the Thai Chocolate Cookery Centre. There were only two other people in my class. Nikki and Mike were two doctors from St. Louis. They were both very nice. He diagnosed me with bronchitis. Mike helped me get the proper medicine. I'm so happy that I met them because I had been feeling terrible for the past week.

We made the following dishes:
1. Thai Chicken salad
2. Penang Curry
3. Cashew Chicken
4. The best fried veggies ever
5. Stir fried thick rice noodles with chicken
6. Fried Bananas with coconut toffee
7. We sampled in season fruits (rambutan and mangosteen)

The class was very informative and the food was delicious! I am so happy that they gave us a mini cookbook with the recipes. I will try to have a repeat performance when I get home. We ate so much that I felt like it was Thanksgiving. I couldn't help it because the food was so delicious. I am so happy that I decided to take the course. Well worth the $20 fee.
