After a week and a half with no running water, it has finally turned back on! Luckily, our host family stores water when it is on, because it is usually off during the week (I believe as government rationing). After so long off, however (someone destroyed the line, and it had to be repaired), our storage was running short. With 9 people in the house, we were so glad when it returned! Also, we cooked dinner for the family this week. Our menu- red bell peppers stuffed with rice, kidney beans, corn, tomatoes, onion, and garlic with side dishes of cucumber, tomato, and onions w/ Italian seasoning, and chips and homemade guacamole. I have to say, it was a bit challenging to figure out a meal with no meat, no cheese, no oven, and ingredients that can be found over here, but we did it! The best part is- everyone actually liked it! I also made No-Bake Peanut Butter Chocolate Oatmeal Cookies, which are one of my favorites. Ruth, our host mother, is a great cook, so I was a little nervous to make dinner, but it turned out well. I will have to get some of her recipes before I head home; especially how to make chapati- a delicious flatbread that we have with lentils. Yum!
