Today is a real short blog, after breakfast we went to the store to pick up a chicken for dinner tonight.

Dave decided he would make his beer can chicken for dinner. We stopped at the store after breakfast to pick up the ingredients.  When we got home Dave rubbed the chicken to let it marinate, I suggested we cover the chicken with aluminum foil for the first hour of cooking and then take it off the last ½ hour for browning. It worked, even the breasts were juicy.

 I soaked the potatoes (which I poked a few holes in) in water for a couple of hours.  Ken did this the last time we had baked potatoes, it keeps them moist, they don't get burned while on the BBQ and seems to add more flavor when done.  I also rub the outside of the potatoes with olive oil before wrapping with aluminum foil. 

About ½ an hour before the chicken and potatoes were finished I fried up some bacon, drained most of the grease then sautéed chopped fresh tomatoes and green beans with a bit of onion and garlic powders.  Dinner turned out great. 

While cooking today I made tomorrows dinner too, Stewed sauerkraut with smoked and fresh polish sausage.  Now Dave and I can take off and try to get one more sightseeing excursion in before we try to get out of town.  Although we still don't have a date set yet.

Other then getting two dinners ready all we did was watch TV, read books and played with little Sadie.  Dave caught me on the camera having a dog fight with her. 

God bless everyone who has a dog in their lives, and most of all bless all the little critters that God has blessed us with.  May their unconditional love remind us of God’s love for us.
