We are staying at the Exotic Caye Beach Resort, with its down to earth Crazy Canuck bar, and our room has a separate sitting area and kitchenette, but we are on vacation after all so cooking has not been a priority, other than a great cup of coffee in the morning, we have been eating all our meals off premise.
Ramon's Resort, beautiful location, small pool, we went for their Monday Barbecue on the beach, did the same at the Holiday Hotel -you are right on the sandy beach, eating simple but good rice, beans, tortilla and chicken, all for less than the price of a movie ticket in the States.
Since there is only one main road on the island and it does not go all the way to the end, the fastest and easiest way to get to the restaurants and resorts out of the downtown area is via water taxi. During the day this is an adventure in itself, but at night, with no lights to guide you, the small 10 person boat is skimming the waves at maximum speed, in the dark. It was worth a ride to Rojo, located at Azul resort, a multi million dollar boutique hotel, that features admitedly beautiful suites at exorbitant prices, but they are having a promo currently for $995 a night, double occupancy -Let's get two of those please . The restaurant features interesting fusion cuisine such as the pork tostones, coated grouper, panko encrusted shrimp, go for the view, as the service in this high end resort/restaurant leaves a lot to be desired.
Casa Picasso was a little oasis in the midst of the island, owned by two americans, they push martinis, local tapas and feature movies a couple of nights on the walls of the restaurant, give credit where credit is due.
We also ate at the Captain Morgain Resort's Buena Vista (where hawking timeshares is their priority, so we got our lunch for free), and the odd but somehow popular Pier Lounge with its weekly World Famous Chicken Drop - don't ask-see picture instead
