Ok a couple of tips for those heading to Turkey...
1} Have hotel/hoistel/pension booked or somewhat picked in advance as the touts at the bus station can be a bit agressive and it's better to not have to deal with something like that...it also decreases the stress and www.hostelworld.com is a great place (most of the time) to find places
2) As annoying as the salesmen (carpets, clothes, jewelry) can be, just humour them, most of them are great people and are quite happy to joke around...tourists overrun the place, why not try to make money off of them...simply have a snese of humour and don't be rude...relax!
3)As far as other countries, it's good to be somewhat hesitant of getting too friendly with locals, but for Turkey, especially out of the major cities, the people are all more or less delightful and willing to do everything in their power to ensure that you have a wonderful time in their country

Some phrases that I have picked from 2 weeks or so:
Gunaydin = good morning
Merhaba = hello
Nasilsin = how are you
iyi = we're good
tamam = ok
Evet = yes
Hayir = no
Tesekur ederim = thank you very much
Saol = thanks (turkish slang)
...istiyorum = in want ...
lutfen = please
