I returned to Chiang Mai yesterday on a 6 hour van ride.
While the drive between Mae Hong Son and Chiang Mai is scenic, it contains over 1800 curves through the mountains! The public buses are known to carry barf bags and I read a lot of warnings to take motion-sickness pills.
Instead of taking a pill, I opted to pay $2.50 more for an air conditioned, private van for a 6-hour ride as opposed to a public bus that takes 8 hours. I wanted this ride to end as fast as possible. Even with my strong stomach, I was feeling queasy as the driver zoomed through these curves. This poor woman and her young son were puking the entire ride - I felt so bad for them! Throwing up for 6 hours must be so painful.

Today marks my 2 month anniversary of my SE Asia adventure!!!!
I know I say this all the time but time is seriously flying by so fast!
To celebrate this occasion, I signed up for a Thai cooking class today! Of course I was excited to learn how to cook Thai food, but I was more happy to be cooking my own food again! I have not stood in a kitchen in 2 months! I really missed being able to cook!
The program started at 9am, and included walking to a market to learn about the ingredients of Thai food. Then, we headed to the cooking school where we were asked to select a dish from 5 categories: stir fry, appetizer, soup, curry, dessert.
My selections were Pad See Uw, spring rolls, Tom Yum Koon soup, green curry and mango with sticky rice. The cooking Instructor Indy spoke good English so I was able to follow all instructions and produced some amazing Thai dishes! I must say, every single dish turned out fantastic :-) Thai curry was fun - we all got to make it from scratch, crushing green and red chilli peppers in a stone pot, and mix it with a whole lot of herbs and vegetables.
But I've never heard of some of the ingredients, so I'm not sure if I will be able to recreate these recipes at home. And what was amazing about Thai food is that we never used salt/pepper for seasoning!! All seasoning consisted of fish sauce, oyster sauce and palm sugar. That's the secret to Thai food folks!

We ate all our dishes, which was great but we were stuffed. 5 dishes in 4 hours.
It's time for a nap.

I'm jealous of you for having experienced.


OHHHHH... now this would be one of my favorite days, 5 courses in 4 hrs..... its my dream come true. You can do it at home, and you should try and show off to your friends ( which is my way of inviting myself to a meal)
