Ellen found a vegetarian Thai Cooking Course for us that was absolutely wonderful.  Mai Kaidee, the owner and vegetarian chef extradoinaire is a delightful and modest Thai woman who has quite a following around the globe.
She now has 2 restaurants in Bangkok and one in Chiang Mai also.  Our one day class began when Mai took us to a small local market to buy the ingredients for the 10 recipes we would learn to make.  I was very happy to find vegetarian "sauces" and chili pastes to replace the ones which contain shrimp and fish and oysters.  Of course we made our own chili paste from scratch with a mortor and pestal.

There were four of us signed up that day.  Ellen especially enjoyed having two young Israeli travelers to share the experience with.  Mai taught the entire class herself.  We made one dish at a time, taking turns cooking ourselves, and then we sat together to eat it.  We relaxed and visited with Mai and heard stories of her first job in Bangkok at 16 years old, of how she turned to vegetarianism, and of her trips abroad to places like France and Japan to share her skills!  Mai has been written up frequently, including in the New York Times.  We thoroughly enjoyed her and all of our food!  Mai insisted that we learn a traditional song about our food, and Thai dancing too! Oh, we were so full at the end of the day, we had to walk it off! 

Mai Kaidee's restaurants and cooking school can be found near Khao San Rd on Soi Sansen 1.  You won't want to miss this charming lady and the wonderful skills she has to share.  My family is going to be thrilled with my new Thai cooking abilities!
