We booked a two day tour of the Mekong Delta out of HCMC (they're everywhere), which included stops in Mytho, Ben Tre and Cantho.  We didn't get to see much of Mytho or Ben Tre but we did get to see some of Cantho when we stayed overnight.  The park along the river was a really nice place to walk, with brilliant tree and garden sculpting as well as a large tin statue of Ho Chi Minh.
The tour itself was good.  We spent most of our time on a boat riding along different parts of the Delta, which included a little trek through the floating market, all of which was nice.  Alot of the tour was just going to see pointless stuff, like where they make Vietnam candy, fish farms and the like.  But we did see a nice temple that had Buddhist, Hindu and Chinese influence.  We also ate some traditional Vietnam fruit (gross), saw some traditional Vietnamese singing and dancing. Oh, and my personal highlight: I got to hold a huge python.
