in all honesty, we didn't do much in hue.  we were there for 3 nights, but mostly rested the bones.  our outing was to the market the day we left.  it was a nice town with a beautiful river running through.  we spent the afternoon playing cards at a cafe' on the river.  hue is known for their rice pancakes, you wrap it yourself with veggies, or meat, fresh mint and basil, salad, and peanut dipping sauce.  although we didn't have it in hue, we did have this food in saigon.  very satisfying with tons of flavor.  this town is also where many people take tours to the demilitarization zone (DMZ), where north and south vietnam once drew the line.  oh yeah we did pick up conical hats (traditional vietnamese style straw hats).  there is a university here that gives the town part of its progressive flavour.
