Most disgusting dish I have ever eaten

After the usual cancelled flights that we seem to encounter on a weekly basis in South America we finally made our way to Trinidad, Bolivia. Our flight was on a ex-military plane which wasn´t the best flying experience. The luggage storage compartment in front of our seats included around 30 baby chickens in a box with holes in the side of it...they chirped the whole flight. Right before take off the flight attendant handed out pieces of cotton to everyone off a huge cotton ball. They were to be used in our ears for the loud sounds. Hilarious, yup we are SO in Bolivia!
We were shocked to feel 95 degree temperatures and high humidity after spending weeks at high altitudes and cold temperatures. We had been excited to visit Trinidad after hearing stories from when our friends Sarah Haughland Yeung and Mary Lynn Powers had worked there over the past 7 years at different times. Both Sarah and Mary Lynn had been teachers and administrators at La Palmera school which we had the privilege of visiting last week. The school was started 25 years ago and is now headed by Lorna and Lucho Velez. They were recently awarded the presidential award for education from Bolivia for their high level of teaching standards and impact they have had on their students. We had such a great time visiting with them as we heard so many stories of the adventures the students and their ministry has gone through over the years. During our time there we were tasked with painting the front of the school a nice bright blue color. We have no painting experience, but that didn´t stop us from enjoying our time serving them over a few days to drastically change the look of the front of the school.
Lorna and Lucho have many animals at their house, including a howler monkey that we got to play with a few times during our stay there. Roco is a very cute monkey, but rather needy and he got really sad when you had to put him down. We felt right at home during our stay in Trinidad. We spent time getting to know the other volunteers/missionaries serving there for varying lengths of time. It was a memorable and special time that we won´t soon forget. The most memorable and disgusting experience during our time there was our early morning 7 am journey to the local market with Lucho to eat the the Bolivian speciality called Potaska. It is a soup that is cooked through the night for 10 hours or so and actually was quite flavorful. Potaska is translated in english to....drumroll please.....cow head soup! Yup, it contains cow brain, eye, cheek and other nice cow head items that are deemed a delicacy in Bolivia. The photos are pretty hilarious, so enjoy them rather than hearing all the gross details here. Some other items we enjoyed during our stay there were cow nerve leg juice, tongue, kidney, intestine and heart. We both ate all of these items, but Matt was much more daring than I.

I was assigned to create a false travel diary about Bolivia for a school project. Your story about 'cow head soup' and the chickens on the airplanes was not only entertaining, but it also helped me to achieve an A+! Thanks for the great story!
