For those of you who wanted the recipes for my mother's Tikia and my sister's Banana Loaf I shall type them up here if I get a chance before I go.
Just in case I don't get around to it and you want to have a go, keep in mind the following:
Top Tip for Tikia: Don't boil the potatoes for too long and leave them to cool before peeling and mashing. Do not mash too much, otherwise the cakes will not hold their shape when frying.
Top Tip for Banana Loaf: My sister uses Pecans instead of Walnuts; they taste much better in this recipe!
