Happy Thanksgiving!

We wish all of you a Happy Thanksgiving! We hope that you were able to enjoy this holiday with family and friends. We missed being there with our family, but we enjoyed the day with our 'Galley family'!

As you can imagine Thanksgiving Day is an extremely busy day for us in the kitchen! The cooks and the bakers begin preparing for the holiday weeks in advance. Anyone who has hosted a Thanksgiving dinner knows how much time and hard work goes into preparing the meal...now multiple that by 1,000+ guests!

Just to give you an idea of how much food was prepared, here are a few statistics:

1,200 lbs. Turkey
400 lbs. Roast Beef
500 lbs. Mashed Potatoes
350 lbs. Root Vegetables
300 lbs. Asparagus
75 lbs. Lettuce
80 lbs. Cucumbers
50 lbs. Cherry Tomatoes
16 gals. Salad Dressing
100 lbs. Cheese
350 lbs. Cocktail Shrimp
2,000 Dinner Rolls
60 Pumpkin Pies
40 Pecan Pies
40 Apple Pies
1,000 pieces Pumpkin Cheesecake
1,000 pieces Chocolate Cake
4 gals. Real Whipped Cream

Wow! Talk about a TON of food!

We would agree to say that the day went rather smoothly for all of the anticipation that was built up! There were 4 meal services that were offered through reserved seating's. Although the meal was still buffet style there were several courses that were offered. With all of the formality for this special day we were tasked with a longer shift to include the set-up, break down, and linen service between seating's.

After the meal was set-up and ready for the first service we had our 'family meal.' We all sat at a long table in the upper dining room and were served wine and beverages from our superiors and station managers. There were several toasts in appreciation of all of our efforts and hard work. The meal was delicious and the desserts were scrumptious...unfortunately we did not get to take a nap and watch football for the rest of the day like we normally would have!
