Besides drinking beer, the other favorite Czech pastime is looking for mushrooms. We have been in every kind of forest in every kind of weather, bent over double, digging in the dirt, and scrambling up hillsides in order to fill our baskets with them. Some days we come home with a measly two or three, sometimes with ten or more pounds of the sneaky funghi. We have dried them, sautéed them, deep fried them, stewed them, put them on pizzas, into sauces, made soups from them, and baked them. There is little else more satisfying than gathering two large baskets full of chanterelles in one hour, knowing we would be paying $12 - $15 a pound for them in the States, coming home and dreaming up the different ways to use them. There are so many varieties of mushrooms, and being the novices that we are, we can still only recognize three that we can eat for sure. But it is enough to keep us busy, out in the forests, with mud on our boots and the smell of mushrooms on our fingers.......
