If you thought Muslims were only good at growing beards, stoning and undertaking terrorism, think again.
Across most of China you will find Muslims, often traders. In the far West, the Uyghurs, make an excellent bread called nan or nang.
It is a flat bread with lots of variations. Yes, it is similar to the Indian naan, or Turkish pita bread. The bread, made with yeast, is cooked in a clay oven.
Beside my local 'tandoor' is a kitchen where they make the dough, leaving it to rise before they throw it inside the tonnir.
As well as a flat bread with rised edges, they also make bagel-like breads, using baking powder as the raising agent. Spring onions are also added to the flat bread, along with flecks of chilli.
Other breads are filled with stuffings - sweet or savory.
