Here's more info about getting your China visa in Hong Kong during the Olympics - and after:

The China visa office (in Wanchai) actually accepts bus/train tickets as the transportation proof, you can buy the return tickets from Hong Kong to Guangzhou at the local CITS. The bus ticket price is as follows:

HK-Guangzhou: one-way HK$100.
Two-way tickets: HK$190.

Remember you'll need the return ticket (and hotel reservation) to apply for the visa. It'll take 4 days at the office by yourself, HK$150 for most nationalities.

As of today (6 August 2008), the FBT ( http://www.fbt-chinavisa.com.hk/ ) can still help you to get the Chinese visa for HK$750 (double entry, 30 days for each stay), or HK$680 (single entry, 30 days only), they will handle all the proof of transportation and hotel reservations for you. They are fast, only 2 days are required for the visa application.
