I am also obsessed with fermented cabbage. I prefer red but any will do. I have sampled more than my fair share and can firmly say that none of them taste like our sauerkraut. The cabbage is warm, almost creamy and yet you get that pucker from the vinegar. Once, after ordering a second plate to accompany my beer, the waitress asked if I was pregnant! BWAHAHAHA! I nearly fell off my bar stool! I guess it is kind of a strange side dish...or was she referring to my weight?! Hey wait a minute!!!
