Pavlova is the national dessert of New Zealand. The first taste I had of it, I was committed for life. So simple...lots of egg whites for a meringue...slowly cooked in a low oven in a cake shape and cover with Kiwi fruit and strawberries...or anything you like.

This dessert,for unknown reasons, was named after the famous ballet dancer,Anna Pavlova. For some time, the Aussies have tried to maintain it's origins were from the convict nation...much like Russians claiming to have invented everything...come to think of it...much like Al Gore.

Anyway, we joined a wine group a while back that meets every fortnight. Can't get the hang of winespeak, but have met some great people there. Cynthia(ex San Francisco and Adrian,her Kiwi husband) invited us to dine at their house up the coast.Dinner party splendidly set out...great wines...good food...BUT WAIT....Adrian made the most incredible Pavlova to grace this southerly nation. Pavlova
New Zealand are always one step behind Australia so I would have to believe Pavlova was first made by an Aussie.
Now I really want to eat Pavlova!
