Mis Estimados Compadres, 
Amigos y Compaņeros.
My son is in his 40's - on his birthday, I told him that he is middlle aged,,
That half of his life is now over and 
that it is downhill for the rest of his life, the rest of the way..
And that he should try to make the best of the years that he has left..
I think that my little PEP talk really cheered him up a lot..
Although he did seem to be in denial - he kept saying that he was not really middle aged...

The 80's is the age when a lot of people have medical problems and die..
If you can make it over the hump, the 80's, to 90, you are home free 
and the rest of your life is a piece of cake, or so I have been told.... 

At higher altitudes things are different - San Miguel's altitude is about
6,000 ft. to 7,000 ft. - that is more than one mile high...
Recipes have to be adjusted at higher altitudes to adjust to the higher altitudes..
The lower air presure. The thinner air. The dryer air. San Miguel, In addition to being a mountain top desert town, the thinner air does not carry as much moisture as does the thicker air of lower altitudes.... 
The following adjustments in cooking recipes are necessary in San Miguel.....

1.  Lower the levening (sp?) by about 40%, so a bit less than half.
2.  Add about 1.5 TBS of liquid.
3.  Add an egg or just an egg yolk at this altitude, to hold things together.  

Recipes at even higher altitudes have to be adjusted accordingly...

I have also noticed other things - things splatter more... Like when you are frying things..
When you are pouring liquids into a glass there is much more likelyhood of splattering.
Carbonated drinks foam up much more - if I am not careful, they foamup and run over the edge of the glass - which is messy - and which upsets and disturbs me so much that I cannot sleep at nites........ 

I was in to a shoe maker here in San Miguel the other day...
He wrote out a receipt for the stuff that I was leaving with him...
It had been over a year since I had been there to see him last time..
He remembered my name when he was writing out the receipt.
I cannot get over the Mexicans remembering my name, 
when I have only seen them once or twice in my life, over a year ago..
I like to ask why???? What is the reason or answer for this phenomenin...
Is it possible that very intelligent Mexicans are in lower type jobs 
because of the lack of economic opportunities in Mexico....
Is it because more primative, backward people (let's not kid ourselves, a significant proportion of the Mexican people are living in 3rd world, or maybe 2&1/2 world conditions)
remember things differently than our 1st world, materialistic, consumer orientated, alienated society people remember things... Maybe people are more important to the people in Mexico than they are to people in Canada...     .
