today i am at emma and peters apartment in nyköping preparing and cooking a traditional swedish dish for the midsummer festival, we cal them crawfish. we cought about twenty five kilos of them at an old lakeside farm in the södermandsland called gjäversknäs (pronounced yebber-schnez) unfortunately we can only cook about ten to fifteen of them at a time so of our batch of five hundred or so, it should take all day but we have alot of coffee brewing adn good music on so it should be fun. kräftskivafest usually occurs around midsummer and thereis alot of drinking primarily öl and snaps (which is a type of aquavit made from puregrain alcohol, water, dill or any other spices or fruit which brings it to around 45%) which is enjoyed in small tapered glasses amid lots of singing of traditional songs. the whole affair is really fun and goes well into the night and during which time there we will enjoy the sauna and a quick swim in the baltic, the songs and kräftskivafestar have been going on for nearl five hundred years!
the first crayfsh fretival of midsummer was held on vidö and island where we spend the weekends and there were about fifty people there, its really unique to be part of such an old festival that has been enjoyed by so many for such a long time. it is a definite must for anyone who is planing on visiting the baltic states. i'll write later i realized i have skipped several weeks, but i need to get my laptop
PREPARING kräftskivar

4 liters of water
1 liter öl (we used a norwegian brand called 'odin') oh, öl is beer by the way
bit of salt to match the baltics salinity
scads of fresh dill four good bunches

boil the mixture with a cover on and then add ten to fifteen crayfish until they turn red which takes about seven minutes. then remove and add more until you get sick of it and put in to many and make the water overflow...

serve hot to room temperature outside with as much bread and beer as the table can hold. skål!
