After breakfast in the beautiful white washed adobe hotel El Cortija of Cachi, we depart wearing our hiking boots or trail sneakers. Our comfortable travel van winds up the gravel road around hills covered in scrub bushes, sparse yellow grass, and tall branching cactus. We are headed for Las Pailas archeological site.
When the road narrows, we walk on foot with the scent of the wild sage and rosemary in the warming morning sun. Walking past a shepards' home with goats carefully watched over in pens, the stone walls become apparent in low stacked lines across this rugged landscape. Ancient mortars for grinding corn flour and quinoa are a highlight of the journey as well as the Cachi peak showing at moments between the clouds. We are standing at 10,000 feet and the peak watches over this breathtaking valley from around 19,000 feet.
We return to Cachi and voraciously enjoy terrific local pizza with goat cheese, sweet pepper and roasted tomatoes. At this meal the beverages of choice are a crisp, white, local Torrentes for some and the local dark beer, Salta Negro.
Route 40 takes turns and slowly rises into the hills to the picturesque village of Molino. Our hotel was the home of the last Spanish governor of Argentina. Courtyards lined with earthen pots of geraniums and dinner in the comidor or dining room. A local stew with white beans is accompanied by a Salta Malbec and another Torrentes. This one is very floral in the nose, and many people at the table refer to honeysuckle. This wine once again proves to be what's called the Liar Wine with a fruity nose and dry profile on the palette.
