1) They ferment their mash in big open wood vats to make the distiller's beer, and then they let you put your finger in it and taste it. It tastes bitter, because it was the third day of fermentation. Early days it would taste sweeter because of all the sugar yet to be consumed by the yeast. Nonetheless, it's an interesting process to see
2) they have you taste over-aged bourbon during the tasting that they don't sell to show you the difference between bourbons at different ages.
The tour guide was great - also you can dip your own bottle in their signature red wax, which is very gimmicky - but really, you're on a trail of tours - so gimmicky is good :)
We scooted out of there pretty fast to make it to our next distillery - we were on a role to getting out passport stamped and done!
