There are swimming with dolphin programmes all over the place in and near Cancun. My grandchildren did swimming with dolphins at Xcaret, and were blown away (by the experience, not by the dolphins).

... Xcaret, (south of Cancún) works as scubadiver instructor. His wife is working as a veterinarian. They are safe, no flu, no violence. Where I live in central México, no flu either. No tourism either...so start traveling OVER HERE! Welcome to my house!
