A recipe from my beautiful friend Maddi, originally titled 'For all the cooks from my mother'
1 egg yolk
2 tbs milk
500g fresh ricotta
1/2 cup grated parmesan
400g jar arrabiatta pasta sauce
375g fresh lasagn
100g free basil pesto - optional
250g baby spinach
cooked chicken or beef - optional
Preheat oven to 180
On Thursday 3rd April we were on the road again. From Airlie to Bowen (not that much to see)
then onto Townsville. Lovely city and of course the gateway to the beautiful Magnetic Island.
Townsville has undergone some extensive development a lovely city to wander around and an amazing esplanade complete with war memorials, boardwalks, stunning views of Magnetic Island and salt water swimming lagoons (a bit grey for me).

... for us throughout our visit to The Strand and we made our way back to Flinders Square (Daryl got some new flip flops and Sophie got a lovely new top). We made it back to Coral lodge around 5pm. Once again we made use of the facilities in our private unit to cook dinner which was lovely, we spent the rest of the night relaxing and reading up on our next destination.
