PS - A few days later I also had ceviche de conchas negras, a type of black mussel that only grows on a certain stretch of the coast between Ecuador an Peru, and tacu tacu, a wonderfully smooth and hearty rice and bean dish. The conchas negras had the indescribable taste of a fresh sea. Light and salty and rich. By far the most unusual and delicious thing I ate.
