We left our safe haven to drive to the Lasitsi Plateau at 900 metres high our guide book said, it's a vast expanse of green fields inter dispersed with almond trees and orchards. ... they spend the next 45 minutes getting mixed together and heated. After that they will separate the olive oil off the top watery mash. The oil is weighed and the remaining skin and seed extract becomes a brown mixture used to feed livestock. Out of 42 bags we had 2,000 Kg of olives that produced 318 liters of oil. ... are a must, as an occasional olive comes flying at you face. After the tree is free of olives, nets are collected with branches, leaves and olives. They are taken to a hand sifter where most of the branches and some leaves are separated. The remaining olives and leaves mix, are put in 100 pound bags. We did 15 bags today, which is pretty good. After 9 hours of battling branches and waving this wand, carrying the bags and sifting for crete gold, I am tired and my shoulders are crazy ...

Today I made it out to the farm, where I will spend the next bit of time, being a farmhand. The owner is Kostos and his wife will be the main ones hosting. They have three sons that help run the hotel and will help with the harvest on the farm. They have several hundred trees that they will harvest over the next couple months.
