It is built in a 10 km long system of tunnels into the limestone which initialy were cellars for the houses and castle before being joined up. ... winemakers set up shop to do tastings. And not like tastings at home. A "taste" consisted of a glass of each wine, sometimes two. It lasts for hours and can get very rowdy.
