... side bar for a drink and to check out our digs for the next few days. As the sun went down we decided to get some Mexican brought up to our room and have an early night. We had 3 things we wanted to do in Cabo, eat, drink and relax! And we didn't these things very well. With poolside service and picture perfect weather it was just what we needed. We went down to the Mexican Fiesta on our second night in ...

... through the air. Amazing. The professional photographer managed to capture it as it came crashing down. In the evening we ate at an Italian restaurant with the nicest lasagna… so good, that we went back the next day for lunch with the nicest pesto bruschetta to boot. Normally I don’t eat tomatoes, but since I’ve been here, I eat them with nachos and now bruschetta. Mmm.

... Throughout the week I had fajitas, tacos, nachos, taquitos, enchiladas, burritos and quesadillas accompanied by fresh salsas and guacamole which inspired me with new ideas to pack a punch in my Mexican cooking back home. After years of eating New Zealand Mexican food I can finally say I've eaten authentic Mexi food in the motherland. It makes you think about all the meals you've had in restaurants back home and I can safely say I won't go back to some of them ...
