... After the morning service we all enjoyed a potluck style lunch. It was clear that our ladies went all out to provide a very tasty lunch for all! The lunch was followed by coffee. Filipinos often drink their coffee with plenty of sugar and milk, so a powdered packet called "3 in 1" (instant coffee, powdered creamer and sugar) does the trick nicely. Just boil up some water to add to the "3 in 1" and voila, you have coffee! ...

Silay was the epicentre of sugar cane production from the 1850's onwards and so much money was made that 29 ancestral hacienda style mansions were built around the town. Most of these have been passed down the generations and are still family homes, some of which are open to the public.
