The family run restaurant as part of the complex (I use the word complex loosely) opened at 7:00. We are Canadians so we sat on their patio and watched the olive wood being brought in for the pizza oven, the oven being lit, the pizza dough being kneed into balls and stored in the warming drawer, the pizzas being made and thrown, the pizzas being topped, baked and then either delivered to us or into boxes as they were picked up. ... down to our place to be safe and to watch as it burned and spread a bit before the fire department finally came from somewhere (they apparently don't have one here). It was a bit too close for comfort but I guess what happened is that the men chopping around the olive trees had not cleared the brush at the base so it caught and spread.
