... tapping is usually done in March/April when they have had a freezing cold night and a warmerish day - the temperature difference needs to be at least 10 degrees. The maple water is extracted into buckets and taken to the boiler. It takes 40litres of evaporated maple water to make 1 litre of maple syrup! When we walked outside we could see the holes in the trees where they have been tapped over and over.
I wish I had room to buy maple icecream from the gift shop ...
Today was the last day we had at Tremblant so we were all sort of committed to going all out. I was getting picked up today and taken to Ottawa so Jenny came up to tremblant with her friend Steph. We met up with them at the bottom of the hill and because Alex was ready we went back up the hill with the girls. We met a massive group of Canadians and Alex and I beat them in pool no less than 10 times in a row. As a result, they took the huge map on the wall of the hostel and drew a love heart around Perth.
