We shared some soba for lunch and then strolled through several shops before catching the boat back to the ropeway. ... in the park that made me envious. After wandering a bit more through the small town, we returned to get ready for our kaiseki dinner. Our 9-course meal was full of fresh, mostly local seafood and vegetables, and was prepared using traditional Japanese methods. It was super different than our meals at Next and RyuGin, which are more modern and/or fusion, but still just as delicious.

Update time!

We arrived in Ito by shinkansen, the super fast bullet train that Japan is known for, and headed to our inn with an expectation of some peace and quiet and a hot bath (a soak in a traditional onsen). ... were kind of surprised when the sake glasses came. It was kind of like a glass in a cup on a dish.
