Wellington is also great for coffee and Asian food. It also has a nice waterfront and beaches and a cable car going up to the Botanical gardens.
At the waterfront is the biggest museum Te Papa which is free and you will need days to see it all properly. From here you will need to take the ferry to the south island or you can fly over as well. I might try both ways.
