Again, in the way of Asia, housewives buy meals each day and fresh cuts of meat, fish and poultry are laid out on tables in the open air for sale. Our Western standards of refrigeration do not apply and the local folks seem none the worse for this "appalling" lack of WHS and food standards !!

The rest of the day, normal lessons were cancelled and the students just played games instead. I visited all of my 10 classes throughout the day and joined in with musical chairs, sword fights with big inflatables, bowling with plastic water bottles, and other fun games and got given loads of food by the students!

We have just had three wonderful days on the island of Gulangyu, near Xiamen in Fujian Province. It is Easter weekend at home, and in China it is Qing Ming Jie, Tomb Sweeping Day, where families return to their hometowns if they can, clean the family grave sites, pray and leave offerings of food, fruit and flowers. My students did some writing about the two festivals this week, and it was quite cute. There was a little confusion about our easter, and some amusing lines as a result. ...
We had a full day on the South China Sea traveling north from Hong Kong to the heart of new China, first stop Xiamen.
It was a highly memorable journey as the South China seas were rocking and rolling, and the wind was howling. One staff member told us it was the roughest he had seen in his 6 months on the ship. We did okay until Gillian took an abs class, and found that rolling on the floor of a boat in rough seas is indeed ill advised. Fortunately ...
