By this time we were feeling rather hungry. I had heard about this, pork knee / knuckle, dish that the Czechs like to make and it sounded right up my alley. We did a quick web search for a restaurant, in the area that could tick this box.

-Evening with Pavel Pavel, one of the elders in the Chinese group, invited me to "the beer factory". No they don't brew beer there but I suppose you could call it an assembly line of sorts... Each table has a 2 glass cleaning spray nozzles and 4 tap heads. In the Czech culture it is disgusting to poor new beer into a glass that has any trace of old beer (from your last glass) in it.
