      ... Chicken Fontinella --"lightly floured and sautéed chicken breast topped with Hearthstone ham, creamy spinach, artichoke hearts, fontina & provolone cheeses. Baked to perfection and served on a bed of linguine topped with a rosa sauce." It was as good as the description suggests it might be.

      After dinner, I called Richard Nau (as mentioned above), we gassed up the car, and took a brief drive through the St. Olaf campus. We then returned to our room and called it a day.

      Today we went with Dick and Claudia to their gym. This is more like a spectacle than a gym. It has just about everything and then some. This is in the Dakota Reservation and run by the American Indians and that means - think about it - a CASINO. This is a definite complex of buildings and then some.       We visited the Mall of America (did you know this was developed by 2 Iranians?). We spent most of our time in the 7-acre, indoor Nickelodeon Amusement Park, including some surprisingly good roller coasters. Our favorite was Spongebob's Glove Park coaster, with a 180-degree vertical drop.

      ... satisfying (although we thought the little cups of pudding before dinner were a little unusual!). Mom & Dad Kingma were staying in Eau Claire for the night, but we were heading on to a suburb of Minneapolis, so we could be close to the Mall of America in the morning.
