We walked across the street for dinner tonight. We wanted fried calamari and a pizza. The guy who drug us into the restaurant assured us we could get calamari. We ordered the pizza and calamari, but it wasn't fried calamari. It was like something we'd never had before. It was delicious. It came in a stew of fish stock and red wine and so tender. I know you either flash fry squid or you stew it.
