... ve been pretty busy, so much so that we realised we didn’t have ANYTHING booked or even planned for Canada so our last full day in the states was spent confined to our hotel room near the airport in Salt Lake City. ... Bull snakes have been added to the area to prevent unwanted rattle snakes. This made Rach feel just a little uneasy! After a short briefing we were free to explore the grounds and set up the tents before starting cooking. The bathrooms were assessed as more public than private with toilets having shower curtains as opposed to doors and the showers being a free for all offering no privacy at all! ... the Riverhorse has a 4.5 star rating from Trip Adviser. I had fresh Utah Red Trout baked with a pistachio nut crust- served on a bed of forbidden rice with a pomegranate fennel salsa and wild arugula. It was so delicious I asked the waiter for the recipe. He said the trout was soaked in buttermilk to take away the fish flavor. The black or forbidden rice was cooked in chicken broth with minced onion. well peeps what can I say, Yellowstone National Park was truely awesome. We saw a grizzly bear, bison, a blad headed eagle, a baby bear, old faithful geyser and soo much more, if any of you ever get the chance to go, THEN GO, the place is magical.
