... It was a fascinating process to watch from beginning to end. This producer has 6 huge kettles and each one yields 2 large wheels of cheese (if he's lucky). The farm only produces 12 wheels of cheese a day, while some commercial producers can make 200 wheels a day. After our cheese tasting, we drove back toward Modena to La Vecchia Dispensa, an authentic balsamic vinegar producer. ... and radicchio that was delicious. That was followed by the pasta course of ravioli. Half the ravioli were ricotta and herb filled, and half were filled with butternut squash. We continued with a radicchio salad and ended with a "chocolate salumi". Of course, there was plenty of Lambrusco flowing. So much for our "light lunch" We continued on to Fratelli Galloni, the premier prosciutto producer in Parma. We had a tour of the facility by Marina Galloni, ...
... We were allowed to park outside the front door, felt like the Queen only couldn't get out of car very well as crammed too much with our luggage!!!! Saw La Ferrari before going to Restaurant Montana which had been recommended to us. Drivers and Ferrari fans go there. We were told we did not need to book but it was obvious it was popular once we arrived. Told us no table but we pleaded and they relented. You know when a place is popular when there is no menu, they just tell you ...
... The town is so pretty with beautiful buildings and so clean. Made it back to hotel for 12 noon departure to Maranello. Drove through Gotthard Pass which took us above the clouds. Stu always wanted to drive this. Lots of hairpin bends. Scary for passenger! Very beautiful until fog descended. 272 miles later at 5.15pm we arrive at Locanda del Mulino, our hotel. Pleasantly surprised as looks well ...
... Modena. Enzo built this factory in 1943 to avoid being bombed. You can do a simulated test drive reaching speeds of 300km/hr in a F1 car. Next was a visit to a winery which makes Lambrusca where after viewing the wine process with the owner we had a very generous lunch of 4 courses with wine. We were allowed to visit the kitchen and saw 3 woman hand making very small tortellini used in soups. ...
