This is a fantastic part of Italy that we just loved. B&B was an A+ and the food here is off the charts. We visited a lateria and watched them make parmigiano reggiano which was an unbelievable process. Also went to Balsamic production facility - again I had no idea that the process takes years. Yes, the Parmigiano Reggiano requirements are that the cheese is aged for 12 months then inspected, then aged another 12 months minimum and and only then can it be deemed saleble.
