At times some of the tasks seem tedious and even boring but it is providing me with some food for thought as to whether and what type of culinary experience I want in my future. That has been the highlight of today. ...

The cheddar and leek crumbles washed down with ice cold sparkling Elderflower water were very refreshing. After Shap we headed out of town crossing the railway line to Glasgow, and the M6 - not that pretty and an overture to the afternoon. For the next 2 hours we walked around a quarry and ...

... truffle. I made a Chocolate Delice which has the texture of the interior of a milky way bar, very airy and delicate. This is then cut into squares and completely dusted with cocoa powder. I made ganache of white chocolate and milk chocolate to be used in different desserts, English toffee sticky pudding which is made with dates, soufflé batter and on top of all those things we worked on two types ...
