Our first stop on the road to South America was an overnight in Dallas, Texas on Spencer's B-day. So, I scouted out a famous BBQ place that was close to the airport and our hotel - Hard Eight Texas BBQ was it! We ordered a tray of meat - seriously. We chose a sampler tray of different meat including; beef brisket, chicken jalapeno poppers, spicy sausage, and some beef skewers plus we added corn on the cobb. Everyone's favorite was the beef ...
... and I must change my perspective to be able to see it.
So with that being said, I'm excited to say that I will be starting a "part two" to my blog stateside. Although I was born and raised in Texas, there are plenty of things I have not done. And with as much as I do within this country, I'd love to be able to share with you all those adventures, pictures, video blogs, life moments, and thoughts. So...stay tuned! :-)

... also fit a familiar mold of many of our friends along our travels - they love animals - and have 3 dogs and 2 cats, all rescues. Mary and I were particularly enamored with Jill, a smaller dog of unknown origin, who was blind and yet negotiated 2 flights of stairs with no problem.
