    Today was "The Big Day"! We left our hotel at 5:15 am to get to a parmigiano reggiano producer located an hour north of Modena. We needed to plan our arrival to watch the entire cheese-making process. The cows are milked at 3:00am, and the process of making the large wheels of parmigiano starts a few hours later.     ... year old sister Gabrielle and another person, Lucianna, we learned how to make the dough, roll it out, and shape tortellini, then we cut tagliatelle. Gabriella monitored all of our cutting and as Susan has said, none of us passed muster. We learned that making pasta is a labor of love.     ... and radicchio that was delicious. That was followed by the pasta course of ravioli. Half the ravioli were ricotta and herb filled, and half were filled with butternut squash. We continued with a radicchio salad and ended with a "chocolate salumi". Of course, there was plenty of Lambrusco flowing.     ... five days a week. Saw upholstery being assembled and the choices new owners can make to personalise their car. Finally, taken to Ferrari store and made small purchase, no not a new 458 Italian, .... A mug!!! Maranello is like a shrine to the Ferrari. Flags everywhere.     ... The town is so pretty with beautiful buildings and so clean. Made it back to hotel for 12 noon departure to Maranello. Drove through Gotthard Pass which took us above the clouds. Stu always wanted to drive this. Lots of hairpin bends. Scary for passenger! Very beautiful until fog descended. 272 miles later at 5.15pm we arrive at Locanda del Mulino, our hotel.
