In a pan fry oil, garlic, fresh ginger, nutmeg, cinnamon, red onion, cumin. Add masala mix (as above). Cook 2-3mins.
Add fresh garlic, fresh tomato sauce, 1 tablespoon cream, 1/3 C coconut, cashew nuts, raisins and dry ground masala mix.
Pour over koftas (with hole inside kofta). Grate paneer on top, garnish with cashews, raisins, pomegranate etc.

We decided to leave our big backpacks in left luggage at our Delhi hotel and explore Rajasthan for a few days.

Our first stop was Pushkar, a small town, which made a refreshing change for the big cities of Delhi and Varanasi. However we did arrive in Pushkar in the middle of their busiest week - the Camel fair. Apparently during this week over 150,000 camels from all over India are traded in the town.
