The concrete is about an inch from the top of the rocks for grip and to allow infilling. The infilling was done by the donkeys, leaving a very rustic aroma in the air. ... is requires. This was quite evident at the last winery we visited on sunset where we could see the evaporated salt water float above us we sat with perfect Caldera views. The vines are kept unstaked and trained low to the ground in the shape of a basket where the grapes grow towards the inside. This helps protect them from the fierce winds and heat. The wines we tasted were pleasant but not the quality of the Australian wines.
