      ... yesterday's ride was over 50 miles long with 4500 feet of elevation gain!

      So - the first course was cauliflower mixed with cheese and sort of puréed, served hot. Really yummy! Then, Ravioli served in the juice they used to cook the meat, which was inside the pasta.
