... part of that meal was the mango sticky rice. It was DELICIOUS! I have reread this section and realize talking about 3-in-1 popcorn and mango sticky rice makes us sound like fatties, but let me be clear that most days Rick and I spend the afternoon at the gym/pool and have been eating yogurt, tea and a piece of bread w/ peanut butter for lunch, so splurging every now and then isn't totally ruining us.

For those of you interested in learning about the recent history of Cambodia and Vietnam I'd recommend the following books : Cambodia's curse by Joel Brinkley and Vietnam – A history by Stanley Karnow. Both won Pulitzer prizes. Cambodia's curse is a recent book and follows Cambodia's political history until present day while Karnow's book was published in the early eighties when Vietnam was still a communist country. This place is stunning; it’s like something out of the Jungle Book. The houses line the river flowing down stream, the jungle is literally on the other side of the river and behind the guesthouses.
